Taco or "Dump Soup"
My wife, Pat, calls this Taco Soup when she makes it. I call it "Dump Soup" when I make it - I just dump everything together. It's sure tastes good on a cold winter day, though.
Ingredients:
Veg all - 1 large can
1 lb hamburger meat
3-4 Smoked Sausage
1-2 small onions
1 can whole kernel corn
3-4 carrots
1 pkg Taco mix (dry)
1 pkg Ranch Dressing mix (dry)
3-4 potatoes
1 can pinto beans
1 tbl sp salt
1 can diced tomatoes
1 small can tomato paste
Brown the hamburger meat in a skillet until thoroughly cooked. Slice the Smoked sausage into 1/2 to 3/4" pieces.
Dump the can of Veg All into a large soup pan. Add the hamburger meat and smoked sausage. Add 1-2 onions cut into wedges. Add the corn and 3-4 carrots cut into small pieces. Add the Taco mix and the Ranch Dressing mix, one can of pinto beans, 1 can diced tomatoes, and the small can of tomato paste. Add one - two cups of water for juice. Salt to taste - usually about 1 tblspoon. Cover and simmer on low heat for about 1 hour or until the potatoes and carrots are cooked. Serve with cornbread. Um, Um, good! |
